Homemade Apple Cake Recipe

Apple Cake

For the cake
1 cup of cooking oil
1 3/4 cups of sugar
1 tsp vanilla
3 eggs
2 cups of flour
teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups of peeled and cubed apples
1 cup of chopped walnuts

For the icing
1/4 cup of brown sugar
3 tablespoons of unsalted butter
2 tablespoons of water

For the cake
Preheat the oven to 350 degrees.
Cream the cooking oil, sugar and vanilla in an electric mixer on high. This should take about 2-3 minutes.
Once combined add in the eggs one at a time beating throughly after each addition. Scrape down the sides as needed. Mix until light in color and fluffy in texture. 
In a separate bowl, add combine the flour, salt, baking soda and cinnamon. 
Add the dry ingredients to the wet ingredients and mix until batter is formed. It should be wet and sticky to the touch. 
Add in the apples and walnuts and stir lightly until evenly combined.
Scoop your cake batter into a greased 9x13 dish and bake for 45 minutes or until the cake is golden in color and fragrant. 
Once you take out the cake, let it cool for 10-15 minutes before topping it with the icing.

For the icing 
Heat the butter brown sugar and water on the stove. Stir constantly until the butter is melted and ingredients are combined.
Let the icing cool for 1 minute before pouring it on top of finished cake.

Serve with a big scoop of vanilla ice cream and enjoy this autumnal baking gem!
